Traditional Organic White Flour (704)

This white flour, with its unique balance of flavours and textures, is our ode to a beautiful heritage English grain called Maris Widgeon. Our millers prepare it in stout elm wood bins. We blend the Maris Widgeon with carefully selected organic wheats from the continent, to create a flour that will give you consistent baking results each time.... **Apologies, 2.5kg bags temporarily unavailable, but coming back soon!**

Traditional Organic White Flour (704)

Well suited to regenerative and organic systems of farming, Maris Widgeon is also famously prized by thatchers for its long straw which lasts for many years. For every acre, Maris Widgeon yields less than half the amount of wheat of many modern varieties, but its quality and flavour are so fantastic we have worked with farmers for over 40 years to encourage the growth of this heritage variety and help retain genetic diversity.

A superb, versatile flour, suitable for a wide range of breads. The gluten of Maris Widgeon is a little more delicate than some wheat varieties that you find in strong white bread flours for example, so treat it with a little more care to get the best results.

Please note: This is the same flour as our Organic Strong Plain White (701) Flour, just a different bag size. For historical reasons they have been simply been branded and marketed in slightly different ways.
