This Shipton Mill all-purpose flour is made with a blend of different heritage organic wheat populations that are selected for their ability to thrive in an organic regenerative system whilst achieving the protein quality needed to give our flour both flavour and function.

This is a light brown flour with fine bran particles, milled from a blend of UK grown organic heritage wheat – a mix of different species and varieties (“maslins”). It reintroduces biodiversity to agriculture through growing a number of wheat varieties, to move away from the current monoculture of single varieties.
We class this flour as an “all-purpose” style flour due to the more delicate gluten.

Grains that speak of People & Traditions

Heritage wheats can create strong connections between people and places. Historically, wheat fields often contained multiple varieties. Farmers would save and trade seeds and pass them from generation to generation. Heritage populations build more resilience to climate change and plant disease as they are made up of multiple different varieties. For example, where one variety might be susceptible to a particular plant disease, the other varieties may not be affected and the harvest survives (unlike with a monoculture). Over time, the population adapts to the land and weather, with the most successful varieties thriving. Heritage varieties have deeper root systems so they can extract nutrients from deeper in the ground.
