Ingredients
8 well ripended bananas (usually found on the bargain shelf)
400g of Demerara sugar
250g of soft butter (ideally unsalted)
4 medium sized eggs
365g plain flour
35 g wholemeal flour
5 tsp of Baking powder
½ tsp of Bicarbonate of Soda
120 g Walnuts
80g Blueberries
Method
- Line two 1Kg oven tins and set the oven to 190degrees for convection oven and 180 degrees for a fan assisted oven
- Cream the bananas and sugar together either manually or better still with a whisk or processor.
- Add the eggs, one at a time, together with a quarter cup of flour per egg and mix.
- Mix the two types of flour and then add the Baking powder and bicarb .
- Place the wet mix in a large bowl and sift in the flour folding it in gently as you go.
- Sprinkle in the blueberries and walnuts a tablespoonful at a time and once again gently folding into the mix.
- Spoon the mixture into the oven tins and then place them in the centre of the oven
- Bake for approx. 40 minutes
(check by inserting a skewer into the centre of each loaf and if it emerges clean and the loaves feel firm rather than squishy then they are done). - Remove and place on a cooling tray
