Sourdough flatbread

Sourdough starter mixed with enough plain flour of any type to make a soft dough. Add lukewarm water to bulk up the starter if necessary

Leave to rise for an hour or so

Heat baking stones or pizza pan in a very hot oven 20 mins before needed

Roll out the dough on a floured board into the size required.

Bake on the hot stone at Mark 7 for ten minutes

Transfer to a dry very hot heavy iron frying pan or griddle to brown each side

Split and fill with the filling of your choice (grilled halloumi and dressed salad is our favourite)
