Seeded Soda Bread


400g Self Raising Soda Bread Flour. *
50g Whole meal S.R Flour.
1/4 teaspoon bicarbonate of soda.
1 tablespoon Soft Brown Sugar.
1 tablespoon Linseeds.
2 tablespoons Sesame Seeds.
1 tablespoon Pumpkin seeds.
50g Crushed Walnuts.
300mls Buttermilk + extra sweet milk **

* If using plain flour increase the quantity of baking powder to 1 teaspoon.

** See Method regarding quantity of semi skimmed milk.


Heat oven 210*C.

Line a 2lbs loaf tin.

Place all the dry ingredients into a large bowl.

Add the buttermilk and adjust the semi skimmed as necessary to achieve a sticky dough.

Place into the tin and place another tin upside-down on top.

Bake for 35 minutes then remove the upside-down tin and bake for a further 10 minutes.
