Ontbijtkoek/Peperkoek (Traditional Dutch Breakfast/Spiced Cake)


  • 250 grams dark rye flour
  • 200 ml butter milk or milk
  • 2 tablespoons of treacle or molasses
  • 100 grams brown sugar
  • 1 tablespoon baking powder
  • pinch of salt
  • 2 tablespoons of mixed spices

Spice mix recipe (all in powder form):

1 teaspoon of cardamom

1 teaspoon of cinnamon
½ teaspoon ginger
¼ teaspoon of each; cloves, nutmeg and black pepper
⅛ teaspoon of each aniseed en coriander

Heat up the oven to 160 degrees.

Add all dry ingredients and mix them well. Mix the treacle and sugar add it slowly to warm milk till it's mixed well. Add the liquid to the dry ingredients. Pour the dough in a loaf pan covered with baking paper and bake the bread for an hour. After it's cooked spread some milk on the top of the bread, cover the pan and let it sit in the steam of the turned off oven. Wait till it's completely cool to slice and eat. The longer you wait the better it will taste. Enjoy/Eet smakelijk!
