Multi seeded granary loaf

Ingredients

400g candian strong white Bread flour

100g 3 malt and sunflower bread flour

100g 5 seed blend mix

15g olive oil

8g salt

320g water

7g fast action yeast

Method

Mix the yeast with the water. Then add the flours, seeds, salt and olive oil. mix together and knead for 8 minutes or until window pane test passes. shape into a ball and proof for an hour. knock back into a ball rest for 15 mins then shape into a loaf tin. Proof for another hour. Put into a 200c oven for 40 mins with a tray with boiling water underneath to create steam.
