Ingredients
2 large eggs
1 tablespoon apricot jam
180g sugar
150g flour
1/2 teaspoon salt
1 teaspoon baking powder
90ml cup milk
1 teaspoon vinegar
Sauce
200ml Cream
100g butter
100g sugar
90 ml hot water
2 tsp vanilla
Method
- Preheat oven to 180 degrees Celsius.
- Grease an oven-proof dish.
- Beat the sugar and eggs.
- Add the jam and mix through
- Add the melted butter and vinegar to the wet mixture.
- Mix together the flour, baking soda and salt.
- Beat this mixture with the milk to the egg mixture
- Pour into an oven-proof dish and bake for 30 - 45 minutes
- In a saucepan melt together the ingredients for the sauce, and stir well.
- Pour it over the pudding as soon as it comes out of the oven.
- Leave to stand awhile before serving. Serve with vanilla ice cream.
