Malted Darden swiss banana bread

Ok my loves. I am leaving the details out as you need to experiment to get this right for you.


3 bananas frozen and then defrosted.

10 grams live yeast ( 5 grams dried)

10 grams salt warm water

400 grams light malted flour

Dark swiss flours add to as needed ( maybe 200 grams


Freeze old brown bananas

When you want to make the bread defrost bananas

And mix with the yeast, water and light melted flour.

Leave for 10 mins

Add the salt and start adding dark swiss until you get a good dough mix. Like me you have made enough bread to knoow when ypu have added enough flour you dont need need to tell you
