500 g Shipton Mill organic wholemeal flour
400 ml full fat organic milk
1 teaspoon of Bicarbonate of soda
2 teaspoons of sea salt
juice of 1 lemon
put the flour into a mixing bowl, stir in the salt and bicarbonate of soda. Add the lemon juice to the milk and watch it turn into buttermilk! You can use buttermilk instead of milk and lemon juice, if you can get it! Then make a well in the Center of the flour and add the milk mixture. Mix together until you have a stiffish dough. Remove from bowl and turn onto a floured board. Shape to a round. put onto a baking tray scattered with flour, make a deep cross in the Center of the bread, then bake in the oven for 45 minutes at 200 Degrees centigrade or the baking oven of your aga. Ready to eat as soon as cool enough.
