Ingredients
200g walnuts
150g dates / 40g brown sugar
170g butter
210 wholemeal flour (or a mix of white spelt and wholemeal)
3 tsp baking powder
1 tsp cinnamon and 1/2 teaspoon nutmeg
2 eggs
2 tbsp plain yogurt
Method
Preheat oven to 180C
Cut walnuts and dates to medium size (1cm) pieces
In a blender mix butter and small amount of sugar (it won't mix very well as so little sugar but no problem as it will all mix with the flour, etc.). Add the flour, baking powder and spices and mix. Add the eggs one at a time (short bursts to avoid splashing too much) and mix. Add the yogurt (short bursts too) and mix thoroughly.
Stir in first dates and mix until dispersed (this will chop the dates further, so if you are using soft plump dates no need to chop them first). Stir in the walnuts and mix (just a few short bursts so as not to break the walnuts too much).
Pour into loaf tin and bake about 30/40 mins in oven at 180C until a skewer comes clean. Leave to cool in tin.
