Ingredients
- Preheat oven to fan 170°C
- 250gms Butter
- Lemon zest
- 220gms Caster Sugar
- 4 eggs
- 200gms fresh chopped beetroot
- 150gms Raisins or Sultanas
- 1tsp cinnamon
- Juice of 1 lemon
- 150gms s/r Wholemeal flour
- 150gms plain flour
Method
- Cream the butter, lemon zest and sugar.
- Beat the eggs and add to the creamed butter mixture
- Stir in all the other ingredients with half the flour.
- Stir in the remaining flour
- Put into a 14 x 21cm lined loaf tin
- bake for 1 1/2 hours at 170deg (170deg in my electric fan oven)
