Ingredients - For 3 small loaves
- 1kg 100% wholemeal flour
- 10g powdered yeast
- 5g salt
- 600ml warm water
- optional - anything you want e.g. nuts, seeds, dried fruits, oats, other grains...use your imagination!
Mix the dry ingredients together in a bowl. Add the water slowly to find the consistency that you like - soft, easy to knead and a little sticky. It is helpful to just use one hand so that the other is free (and clean) for topping up the water.
Put the mixture out on a work surface dusted with flour and knead your dough for at least 10 minutes. Enjoy the muscles working in your back and legs when doing this!
Leave your mixture to rise in a warm place - in the sun or next to a radiator - for between 45 and 90 mins. Then knead again and place into your greased bread tins. Leave to rise again for the same amount of time.
Put in the oven for 40 mins at 180 degrees celsius. When they are finished they should sound hollow when you tap them on the bottom. Leave to cool upside down on wire rack.
Experiment with anything you want in the mixture - try peanut and raisins or pistachios and dates or sunflower seeds and apricots!
