200 g Sourdough starter
240ml Water
100g Canadian Strong White bread flour
160g Organic 3 malts & Sunflower brown flour
160g Organic 100% Wholemeal flour
10g Salt
Mix the sourdough starter with the water, all the white flour, half the 3 malts and half the wholemeal. Mix together in a large bowl with a wooden spoon, cover, and leave overnight at room temperature. In the morning the mix should be bubbly - if its not looking active then leave it for a bit longer, perhaps in a slightly warmer place. Once you are happy just tip the mix into your bread maker and add the remaining 80g of wholemeal, 80g of 3 malts plus the salt. On our Panasonic bread maker we use the 5hr ‘Wholemeal’ setting for a very tasty loaf. Try not to eat it all in one go!
