Wholemeal Spelt Loaf

500g Spelt Flour (white or wholemeal)

1/2 tsp salt

1 tsp quick yeast

1 tsp sugar

300 ml warm water

1 tbsp vegetable oil

Mix together flour, salt, yeast and sugar

Mix water into the flour (should be very wet)

While it is still claggy, add oil and knead until smooth and pliable

Prove for an hour

Turn out and knead well

Place in baking tin and prove for 1/2 hour

Bake in 220C for 40 minutes.

Works every time!
