1 cup emmer flour
1 cup wholesome white Lammas Fayre heritage blend
1/2 cup sultanas
2 cups strong brewed tea
2 teaspoons cinnamon
2 teaspoons bicarbonate of soda
3/4 cup golden granulated sugar
4 tablespoons organic sunflower or other oil
2 teaspoons organic cider vinegar.
Brew strong tea in a bowl, remove teabags and add dried fruit overnight to soak.
The next day, turn on oven to preheat 170C fan/180 conventional/gas 5.
Add other ingredients to bowl, and mix with spoon only until flour mixed in.
Place in oiled 2lb loaf tin. Cook fan oven 170C/ Gas 5 for 45 minutes. Check with skewer and give another 5 minutes if not cooked. Leave in tin for 10 minutes, then remove and cool.
