Makes about 15 (depending on the size of your biscuit cutter)
Ingredients
25g wheatgerm (I used Organic wheatgerm and bran from Shipton Mill)
50g sugar
1/4tsp salt
1/4tsp baking powder
175g wholewheat flour (I used Organic finely ground 100% wholemeal flour from Shipton Mill)
75ml plant milk (may need more)
2tbsp neutral oil
Method
1) Preheat oven to 180°C. Place all dry ingredients into a bowl and mix until well combined
2) Add plant milk and oil and stir together using a table knife
3) Keep adding plant milk until the mixture comes together to form a dough where no dry flour is visable but it isn't sticky
4) Roll out onto a floured surface to roughly the thickness of a £1 coin
5) Cut into discs using a biscuit cutter, place on a lined baking tray and prick eack biscuit with a fork
6) Cook for around 12 minutes (keep an eye on them!) and cool on a baking tray. Enjoy!
