This bread is simple to make and the shaping not to difficult. Plenty of YouTube videos showing how a expert does it. I use a Bosch ProfiMixx 46 which has two settings for the bread hook. Speed 1 = Low Speed and Speed 2 = High Speed.
500 g untreated organic white flour (Shipton Mill Type 105)
325 g water @ 22°c
100 g rye starter @ 100% hydration
4 g fresh bakers yeast
10 g sea salt
Light Rye flour for dusting
