super slow sourdough!

300g sourdough starter

300ml water

500g great quality strong bread flour

11g salt

Morning: Stir together the starter, water and flour. Cover and leave for at least an hour

add the salt and mix in a kitchenaid for 5-10 mins with a dough hook or knead by hand for 10-15 mins

cover and leave in normal room temperature

evening: pre shape your bread using plenty of flour... leave uncovered to form a skin for an hour or so

reshape and place in proving basket. Cover and leave until the morning

next morning... when you are ready to bake tip out loaf (carefully) onto a hot tray. pop in a hot 200 degrees ish oven and throw in a cup of water for steam.

bake for 35 mins until you have a dark golden crust.

wait 30 mins (if you can) to cool before cutting...
