Mix together
500g Shipton Mill Organic strong flour no 4
75g golden caster sugar
2teaspoons mixed spice
1 teaspoon cinnamon
Zest of 1 orange
10g salt
2 sachets of dried yeast, the fast action sort that you mix straight in.
In a pan or in the microwave, heat 40 g of butter with 300ml milk until just luke warm. If you have to heat it more to melt the butter, cool before using.
Add the milk mixture along with a beaten egg to the dry mixture in a large bowl and gradually mix together to form a silky dough,. You may not need all of the milk. Turn the dough out onto a large board and knead it until smooth. Now, you can knead in some fruit, about 200g. You can use raisins, currants, chopped dates, nuts, or your own mixture. Put somewhere warm to rise for an hour or more.
When risen, turn out again and knead for 5 minutes, then divide into 12 balls and place on a baking tray. Leave again to rise. Once they are the size you want them to be, pop into a nice hot oven for 10 to 15 minutes. 180 fan oven.
Bake until golden brown and as soon as they're done, brush with melted sugar and water or maple syrup and sprinkle with cinnamon. Gorgeous!
