spinach/leek pie


3 large onions (finely chopped)

800gr spinach

3 leeks

250gr feta cheese (crumbled)

3 eggs

1 pack fillo pastry

salt / pepper

anise seeds (can substitute this with finely chopped fennel)


Put some virgin olive oil in a large pan (just to cover the bottom of the pan). Add the onions and stir till softened. Then add the leeks and spinach and stir till softened. Add salt, pepper and anise seeds and let it cook in medium-low for about 30-40 minutes. Once the mix is done, place it in a fine seive to let the juices drain (it will help with avoiding soggy filo). You can use the juice from this mix to make rice (yum!!!). In a bowl mix the eggs and the cheese. Now mix very well your greens' mix with the egg mix (this is your filling for the pie).

Oil a baking tray and place neatly 4-5 fillos at the bottom (oil gently each fillo). Pour the above mix on top of the fillo. Cover with another 4-5 fillos and your pie is ready!

To make it more crunchy, slise the pie in piece and pour a beaten egg mixed with some olive oil on top of the pie.

Place in a pre-heated oven for about 40 minutes or till your pie looks crunchy and golden.
