Spelt Scones with Blackberry Jam

We blend a mixture of our organic wholemeal spelt flour with our organic white spelt flour to make these scones. Spelt, one of the ancient grains, has a delicious flavour which you can really taste with the addition of the bran particles from the wholemeal.

You can top the scones with whatever seasonal jam you like. These are best eaten on the day of making, serve with extra jam and butter preferably still warm from the oven. 

Makes 14 medium scones

INGREDIENTS

  • 170g white spelt flour
  • 170g wholemeal spelt flour
  • 130g unsalted butter, cut into 1cm cubes
  • ¼ tsp salt
  • 2 tsp baking powder
  • 3 tbsp brown sugar, plus more to sprinkle on top
  • 2 medium eggs, beaten
  • 85ml milk (plus extra to glaze)
  • Roughly 100g blackberry jam, or jam of choice. I like looser jams for this personally.

METHOD

Preheat your oven to 220°C. Line two baking trays with baking parchment.

Sift your white flour into a large mixing bowl, and pour in the wholemeal (there is no need to sift the wholemeal, as it would remove the bran). Add the butter and gently rub it into the flour using your fingertips until you have a breadcrumb-like consistency.

Add the salt, baking powder and the three tablespoons of brown sugar and stir to combine evenly. Slowly add the egg and milk to the mixture. Use your fingers to achieve a dough that is slightly on the wet side.

I like to roll these scones by hand, due to the fact the wholemeal flour makes the dough stickier. Weigh out a 45-50g lump of dough at a time, roll into a ball using your hands, and then slightly flatten and use your thumb to create an indentation in the top of each scone. This will be the well for your jam. Repeat until you have used all the mixture.

Place them on the baking trays with space around each to allow room to expand in the oven.

Lightly brush the top of each scone with milk to glaze, and sprinkle the edges liberally with brown sugar. Fill each indentation with a generous teaspoonful of jam.

Bake for 12-15 minutes until risen and golden. Transfer to a wire rack to cool.
