3LB WHITE SPELT FLOUR

2 OZ YEAST

3 1/4 CUPS WARM WATER

1 CUP DEMARARA SUGAR

2 EGGS

1/3 CUP OIL

6 TEASPOON SALT

1 WHISKED EGG FOR BRUSHING

SESAME SEEDS FOR SPRINKLING (OPTIONAL)

PUT FLOUR IN MIXER BOWL. CREATE SMALL 'WELL' IN FLOUR ON ONE SIDE OF BOWL, PLACE IN YEAST, SUGAR AND 1 CUP WATER.

PUT REST OF INGREDIENTS ON OTHER SIDE OF MIXER BOWL. KNEAD FOR 10 MIN.LEAVE TO RISE FOR 1.5 HOURS.

SPLIT DOUGH INTO SIX, BRAID EACH AND PLACE IN 6 LOAF TINS. LEAVE TO RISE HALF AN HOUR, THEN BRUSH WITH EGG AND SPRINKLE WITH SESAME.

BAKE IN PREHEATED OVEN AT 200 DEGREE CELCIUS FOR 20 MIN. PLACE ON COOLING RACK, ENJOY!!
