Sourdough Starter Flatbread

Heat a frying pan and add a little oil. Pour the unwanted mixture into the pan until you have a disc of dough. Cook on a medium heat until the bottom is cooked. You can sprinkle herbs, spices (Dukkah is fabulous), dried chilli, chives, chopped spring onions etc on to the uncooked side of the bread at this stage if you want a savoury flatbread. Flip the whole thing over and continue cooking until both sides are crispy and golden.

A sweet version of these flatbreads can also be made by adding a little sugar or honey to the mix, along with dried or fresh fruit. Try it with maple syrup...

This is a great way to get over that terrible feeling of waste when the unwanted mix is poured away!
