Sourdough Discard Waffles
(My adaptation from several recipes)
• 500g Sourdough Starter
• ½ tsp Bicarb
• 1 tsp Baking Powder
• Optional pinch of salt
• 2 tsp Caster sugar
• 2 Eggs, separated
• Oil for greasing waffle maker
• Whisk egg whites until stiff peaks
• Mix egg yolks with all other ingredients (I whisk for extra lightness)
• Carefully fold in whisked egg whites.
• Spoon into a hot waffle iron according to machine instructions until cooked.
