Soft milk bread

Ingradient:

Yudane

100g flour

80g boiling water

Dough

Liquid

300g warm milk

6g yeast

30g sugar

Dry

300g white bread flour

100g wholemeal bread flour

10g salt

20g unsalted butter

Method.

0. Make Yudan by mixing all Yudane's ingredients a night before. Keep it in a fridge

1. Dry and liquid mixture together then mix Yudane in

2. Knead until you can see window pane effect

3. Rest the dough for 1 hour or double in size

4. Make smaller dough balls (this receipe can make around 6 balls)

5. Bake at 190C in a loaf tin

6. Brush over the bread with evaporated milk
