The bread mix
1 and 1/2 cups of plain flour
1/2 tsp yeast
3/4 tsp salt
1 tbsp olive oil
3/4 cup warm water
Combine and mix the ingredients in a bowl and allow to rise for 2.5 hours
The topping
1 tsp ground sumac
1/2 tsp ground thyme
1/2 tsp ground oregano
1 tsp sesame seeds
pinch of salt
Mix together
Once the bread mix has risen, divide into two and flatten to approx 5 mm thick (if possible!!). Then sprinkle with the topping, drizzle with extra olive oil and cook for 12-15 minutes. I do this at 230 degrees centigrade in a fan oven.
Remove and leave to cool, then enjoy
