400g Organic Light Malthouse Flour
340g Homemade Kefir
2tsp Bicarbonate Of Soda
2tbsp Organic Wheatgerm & Bran, (Optional)
A good Pinch Of Salt.
Place the Dutch oven in your oven and preheat to 210c. I place the pot and lid on different shelves to ensure it heats thoroughly and also to make it easier to put the loaf in.
Sieve the dry ingredients into a large bowl and make sure they are mixed together. Add the kefir, (I'm sure you could use soured milk or buttermilk if you prefer but I like the added flavour kefir brings), and quickly combine. Form the mixture into a rough ball and immediately turn out onto a piece of greaseproof paper. Using the edges of the greaseproof paper to lift the loaf place it into the Dutch oven and put the lid on. Bake for 25minutes and then remove the lid and bake for a further 5minutes.
