Sicilian Pistachio Cake

For the cake:

250g Organic White Flour No.4 (105)

7g baking powder

113g soft butter

150g sugar

60g greek yogurt

60g milk

3 eggs

135g pistachios

7g vanilla extract

75g dark chocolate

pinch salt

Method:

  1. Roast pistachios at 180C for 5-10mins.
  2. Mix dry ingredients.
  3. Add the eggs, butter, milk, greek yogurt, vanilla extract and sugar. Mix until creamy.
  4. Add the flour in thirds. Combine until smooth.
  5. Place into buttered baking tin and bake at 175C for approx. 40 mins.
  6. Melt chocolate and glaze.
