Shortbread biscuits

250g unsalted butter

1255 Caster sugar

250g shiptons mill organic white flour - No. 4

125g seolina

Heat oven to gas mark 2

Mix the butter and sugar together until pale and creamy. add in the plain flour and smolina being careful not to over work it. (ie it is firm and not oily)

level the mixtur on a work surface and vut into fingers (or cut with chrismas tree shaped cutter)

Bake in the oven for 50 minutes.

cookies should be pale in coolour. If you like you can half dip in melted chocolate.
