Savoury bread pudding.

Examine loaf carefully for green or black mould spots, and cut them out with a sharp knife.

Slice loaf, medium thick, and use to line the bottom of a pyrex/ceramic dish.

Cover with a layer of chopped onion, then something savoury, such as sliced salami, cooked sausages cut into rings, peperami sausage, sliced ham, drained tinned fish.

Cover that protein layer with more bread slices, then onion again, and repeat until most of the bread is used up, or the dish is nearly full.

Dice the last of the bread into small cubes, and mix with some cheese also cut into small cubes.

Press down firmly on the food in the dish to compress it.

Preheat the oven to 200 degrees centigrade, and place a baking sheet on the middle shelf.

While the oven is heating, break 4 eggs into a bowl, season with salt and pepper, mix well with a fork to break up the whites. Add twice as much milk as the depth of beaten egg, and beat again.

Pour this custard over all the contents of the dish; it will soak through and roughly half-fill the dish.

Sprinkle the mixed bread and cheese cubes evenly over the top and place the dish on the baking tray once the oven is hot enough.

Bake for 30 minutes, serve with fresh vegetables.
