Rice crispy bars

3/4 cup of frozen fruit

2tbls soft brown sugar

2 cups of mini marshmallows

Rice crispies

In a sauce add the frozen fruit and brown sugar and cook on a low heat until the fruit is soft and the sugar has dissolved.

Blend the fruit to a purée, add the marshmallows and continue to stir until they have melted.

Remove from heat and add the rice crispies a cup at a time until the rice crispies are sticky and lightly coated with the mixture.

Transfer to a shallow pan and press down firm Leave in the fridge and once sent cut into rectangles.

I find it easier to use a 12 individual loaf pan.
