Ingredients
2.5 cups of plain flour (117 works well, or a wholemeal flour)
2 teaspoons of cumin seeds
good pinch of salt
2 teaspoons of olive oil
Method
Mix these ingredients in a bowl and then slowly add up to 1 cup of cold water to form a soft dough (add a tablespoon or so at a time).
Form it into a thick sausage shape and leave the dough to sit for about 10 minutes whilst you get on with other jobs.
Cut the dough into equal slices (approx 12 - 14), and form each slice into a ball.
Flatten each ball slightly and coat each in flour.
Roll out one of the flatten balls until it's about 10cm diameter.
Brush with oil and dust with flour.
Fold it in half, and repeat oil and flour, and fold in half again.
Roll out the triangle (don't worry if it stays as a triangle or becomes more circular, so it's about 0.5cm thick.
Lightly oil a frying pan and put over a medium heat. Place it on the frying pan when it's hot and leave it for just under a minute, flip and repeat until it's golden, bubbled and slightly risen (in places).
Set it aside on a warmed plate and repeat with the others. Serve with a tasty curry.
