Ingredients
- 1000g organic white bread flour
- 780g warm water(32 - 35ºC)
- 22g salt
- 0,8 g dry yeast or 1,6 g fresh yeast
Method
Mix water & flour, leave for 30 mins. Add yeast and salt, mix for 5 min. Leave in warm place and fold 3 times during 1.5 hour. Form ball, move into bowl and leave in room temperature for about 12 hours. Form one big or 2 small bread loafs, leave for 60 min. In meantime preheat dutch oven. Bake 20 mins with lid and 20 mins without lid in 230 ℃.
