Organic Three Malts And Sunflower Loaf 80/20

450g Three Malts Flour
100g Organic Strong White Flour
20g olive oil
10g salt or one level teaspoon
6g dried yeast or a rounded teaspoon, started with water, 1 teaspoon sugar and
1 teaspoon of malt extract

My secret is to warm the flour in a low oven before starting, and between neadings. Combine ingredients with the yeast starter and add more water to make the dough - in the usual way and rest for 20 mins before neading.Knock back after 60 mins, after another 60mins warm dough in low oven, shape as required and proof for 50mins approx. Bake for 26 minutes @ 210C.
