Apricot, Orange & Cardamom
450g self-raising white flour
1tsp baking powder
100g butter
50g sugar
1 orange, zest only
1tsp ground cardamom
Mix all these ingredients until breadcrumb stage then add;
80g chopped dried apricots
Mix briefly then beat the following together;
200ml milk
2 beaten eggs
Mix everything together until fully incorporated then turn out onto a lightly floured worktop, shape, cut and glaze with egg wash.
Bake @ 200°C until golden and slightly firm with a good spring back. (12-15 minutes).
