(Nut Free) Coffee Cake


225g unsalted butter

225g caster sugar

250g self-raising flour (113)

4 eggs

1tsp baking powder

1tbsp strong coffee mixed with a little hot water


Grease two 20cm cake tins and line. Preheat the oven to 180 degrees celsius.

Mix the butter and sugar. Then add the eggs with a little flour and mix lightly. Then add the sieved flour and baking powder, and give a good mix. Finally mix in the coffee and split between the two tins.

Bake in the oven for approximately 30 mins and leave to cool for a little while in the tin before turning out onto a wire rack (pictured).

Decorate with whatever you fancy. I'm going to make some butter icing and flavour it with a little coffee.
