Muffins

Ingredients
750g strong white bread flour
Pinch of salt
10g quick yeast
Warm milk – approx. 300ml
Semolina for dusting

Method
Mix flour, yeast and pinch of salt
Add warm milk to make a bread dough
Roll out dough until it is about 1.5 – 2cm thick
Using a round cutter, cut out circles of dough
Place dough circles on a silicone baking sheet (or greaseproof paper) that has been dusted with semolina. This is so that they can be lifted off easily later). Leave enough space so that they will not touch one another when they rise.
Leave the circles of dough to rise until they have roughly doubled.
Pre-heat a flat griddle or heavy based pan.
Dust the tops of the muffins with more semolina.
Using a fish slice (or similar thin wide flat utensil) carefully slide off the muffins one at a time and bake on the griddle/pan.
Bake each side for about 5mins or until the dough starts to firm up and begins to brown.
Place on a cooling rack covered in a clean dry tea towel.
Cut in half and have hot with butter and jam, or slice open and fill with fried bacon and fried egg.
