600mls warm water
550gms white flour
500gms malted 3 grain flour
4 teaspoons organic dry yeast
4 teaspoons sea salt
4 teaspoons sugar
1 tablespoon olive oil
Combine all dry ingredients and add the water
When the dough has absorbed all the water add the olive oil and knead until the dough feels like silk
Place in an oiled container and cover with cling film
Keep in warm dark place until the dough has risen to twice its size
Then divide into 2 or 4 loaves and form to the shape required.
Place in baking moulds or free form on baking tray. Dust with flour and cover with clean linen cloths.
Place in warm area until risen to twice the size.
Pre heat oven to 240 degrees celcius
Place the risen dough in preheated oven and add a small amount of water to a shallow dish on the oven floor.
Reduce temperature to 200/210 degrees and bake for 30/35 minutes depending on oven.
