Lisa K's Fool proof luxury pastry for any pie


Best making it with organic ingredients.

8 oz Shipton mill organic cake - pastry soft flour,
2 oz ground almonds flour,
4oz very cold butter.
1 large egg
1 teaspoon vanilla paste beaten with 3tablesspoons of cold water


In a large bowl put dry ingredients and grate butter into the flour and add wet ingredients slightly knead into a soft pastry dough. Divide into 2 slightly flattened ball wrap with cling film and let it cool rest for an hour or so . lightly dust table with flour and roll out pastry to fit 9 to 10 inches ovens proof plate that been greased and flour dust and chilled in the fridge for an hour.. Filling the pie of your choice .Filling should been cooked and chilled. Roll the other pastry to fit the top cut off the excess pastry and make whatever pattern you fancy! Put the uncook pie back into the fridge to rest for an hour or so. Brush the cold pie with milk or beaten egg before baking in a preheated oven at 170 for 45 to 50 minutes . Delicious on it own or with home make custard or cream . enjoy
