Light rye bread with raisins

2 cups Finest Bakers White Bread Flour - No.1 (101)

1 cup Organic Light Rye Flour - Type 997 (601)

1.5 tsp salt

1/2 tsp instant yeast

1 cup sultanas or raisins

1.5 cups water

Mix all the ingredients together without over working. Cover and let rest for 12 hours.

Put a lidded casserole dish in the oven and pre-heat at 220c for 1 hour.

Pour the dough onto a floured surface and stretch 4 times. Form a boule, cover lightly and let it rest until the oven is hot.

Put the dough in the casserole dish and cover. Cook for 35 to 40 minutes.

Take the lid off and return to the oven for another 10 minutes.
