Irish Wheaten bread


10 oz plain white flour

1 lb Shipton Mill Organic Irish Soda Coarse Brown Bread Flour

1 teaspoon salt

2 teaspoons bicarbonate of soda

2 1/2 oz caster sugar

4 oz butter

1 pint buttermilk


Preheat oven to gas mark 4.

Sift the flours together and gently mix in the rest of the dry ingredients

Rub in the butter untill the mix resembles fine breadcrumbs

Gently stir in the buttermilk and mix until absorbed.

Turn out on to floured board, knead gently and divide between 2 2lb loaf tins.

Bake for 45 to 50 minutes, remove from baking tins and wrap in clean tea towels until cool.

These are delicious eaten fresh but will freeze beautifully.

Enjoy with butter, toasted or fried, also good with jam.
