Irish Porter Cake

Prepare a caketin by lining with 225g softened butter
225g muscovado sugar
4 eggs
rind of a lemon or orange
500g mixed dried fruit (I used sultanas,raisins, cherries, prunes, mixed peel)
100g walnuts
330ml bottle of Guinness
300g flour
1 teaspoon of mixed spice
1tsp cinnamon
1 tsp bicarb soda

Beat the butter and sugar until well mixed. Add the well beaten eggs and a spoon of flour. Fold in all the fruit and the nuts and add the Guiness to this.

Mix the dry ingredients together. Fold these into the wet mixture and mix well.

Bake in gas mark 3 oven for 3 hours.

This cake improves with leaving before eating. 1 week is good 1 month is better. Pour guiness over the skewered cake when taken from the oven to add
