Homemade Bread with natural yeast, long fermentation


300ml warm water

140g natural yeast (starter)

spoon of honey

2 tablespoons of olive oil

350g of Extra coarse organic wholemeal flour

150g finest bakers white bread flour

1 teaspoon of salt


You can add chia seeds if you like

Mix the warm water with yeast , honey and olive oil

Then add the flour slowly slowly until it will be completely absorbed . The dough must be nice and smooth

Leave it covered in a bowl for at least 8 hours, the container must be kept in a warm place

After 8 hours give the shape you like and leave one more hour cover before to cook in the oven

bake at 230 degrees , for 35 minutes . Ideally you should keep a baking tray full of water inside the oven in order to make a nice crusty bread
