Harvest Loaf

INGREDIENTS

  • 1 egg beaten
  • 1 cup mixed fruit
  • 1 cup soft brown sugar
  • 2 cups Shiptons Self Raising Flour
  • 1 cup milk
  • 4 oz margarine
  • 1 tsp mixed spices

METHOD

  • Line a 2lb non-stick baking tin with greaseproof paper.
  • In a saucepan, melt margarine, sugar, fruit and milk.
  • When melted ingredients have cooled, add the beaten egg, flour and mixed spices.
  • Mix together and pour into a 2lb baking tin. Bake for 1 hour at 350 F/180 C.
