475 mls warm water (46 Celsius)
7 g yeast
30 g brown sugar
15 g milk powder
6 g salt (or more to taste)
25 g oatmeal bran
70 g oatmeal
135 g Three Malts and Sunflower flour
25 g chopped walnuts or mixed seeds or other nuts
275 g plain flour plus more to make a soft dough
Olive oil enough to grease bowl and pan
9"x 5"x 3" loaf pan, greased OR 7 1/4"x 3 1/2" circular pan, greased
In a large bowl, place warm water, yeast and brown sugar till dissolved and yeast has 'proven'.
Add milk powder and salt and stir till dissolved. Add oat bran, oatmeal, Three Malts and Sunflower flour, and nuts or seeds till evenly distributed. Add 275 g plain flour plus enough to make a soft dough. Knead dough till smooth and elastic. Place in a large greased bowl and cover with plastic wrap. Place in a warm place till doubled.
Punch down dough and form into desired shape. Place in greased pan. Place again into a warm place and allow to rise till doubled.
Bake at 190 C for approximately 30 minutes or until browned and sounds hollow when tapped.
