Gluten and dairy free pancakes - Easy and quick!

Ingredients

135 g of flour (Shipton Mill multi-purpose gluten-free mix or Shipton Mill gluten-free white bread mix)

1/2 tsp bicarbonates

1/2 tsp xanthan gum (remove if using white bread mix)

1/2 tsp of salt

2 eggs

50 g brown sugar or honey

50 g dairy-free margarine (not melted)

Method

1- Mix all the ingredients with an electric whisk.

2- Warm up a pan at medium heat with a few drops of oil.

3- Add two big spoons of the mixture to the pan and cook about one min on each side.

To make it vegan: replace eggs by eggs substitute (I tried sia seeds, apple puree or mashed banana, it works perfectly!)
