Foxdale Yummy Soda Bread

Oven 180C

400g Wholemeal flour

300g White Bread flour

100g Oat flakes plus some to sprinkle on top

20g Bicarbonate of soda

10g Cream of tartar

10g Salt

3 Tbsp Black treacle

2 Tbsp Golden Syrup

1 egg lightly beaten

Buttermilk, whey or milk with few drops of lemon juice added

Mix all dry ingredients together.

Add egg and buttermilk to make a soft dough.

Divide into 2 equal portions and form into rounds. Place onto a greased baking tray.

Take a large knife or bread scraper and make a cross in the top, going almost down to the base and dividing it into quarters. Brush a little water on top and sprinkle with oats.

Bake in the centre of the oven for 45 minutes.

Cool on a rack and eat as soon as you can.
