Focaccia with red onion, cherry tomato and baslsamic vinegar topping

1 tsp yeast

600g strong white flour

2 tbsp olive oil

2tsp salt

340ml water

Mix the ingerdients together in a bowl to from the dough leave to rise for about an hour until doubled in size

Split the dough into 2, roll or flatten the dough into 2 rectangles and place onto 2 oiled baking trays, use your finger to make dimples in the dough. leave to rise for another 25 mins

whiltst the dough is rising, slice a red onion and soften in oilve oil over a medium heat, add 1-2tbsp balsamic vinegar, and cut a handful of cherry tomatoes in half, spread this over the top of both breads, place in a pre heated oven 190oc for 25mins

You can also add a little cheese for an extra topping
