Family country style loaf

In a large mixing bowl add

600 gms organis white flour

600 gms wholemeal brown flour

50 gms five seed blend

1 small glug olive oil

2 tsp salt

1 tsp sugar

3 tsp dried yeast added to

1 1/4 pint warm water (I start with one pint and add more water as needed)

Add the salt and oil, to the flour

Add the sugar to 1 pint of warm water, stir then add the yeast stir again then wait for it to bubble up.

Add the yeast and water mix to the flour and mix well. Add some of the remaining 1.4 pint of water as required.

Mix well to make sure all the flour (it wil be very sticky to start with) becomes wetted and knead well.

Form the mixed dough into a round and allow to rise until it is twice iot's original size.

Divide the dough into two.

Knead each half and shape either to fit into a loaf tin or place on a greaseproof baking tray.

Once risen again place in a preheated oven (200/180 fan) and bake for 60 minutes.
